Berry bombe Alaska

For this classic recipe, use a blow torch if you have one, otherwise, the oven works just as well. Remember - as long as the meringue has completely covered and sealed the ice cream, it should not seep out.

Ingredients

  • 225g slab sponge cake
  • 250g frozen boysenberries
  • 1 litre reduced-fat ice cream
  • 4 egg whites
  • ⅔ cup castor sugar

    1 Preheat oven to 200°C. Place sponge cake on a heatproof platter. Top with berries in a single layer. Spoon ice cream over berries. Place in freezer for 1 hour.

    2 To make meringue, beat egg whites until stiff peaks form. Add sugar while beating, 1 tablespoon at a time, beating well after each addition. Beat until thick and glossy. Spoon over cake to cover ice cream completely.

    3 Bake for 8-10 minutes until just golden. Serve immediately.
