Berry ice cream shortcakes
For a quick and easy dessert that looks and tastes sensational, you can't go past these berry ice cream shortcakes. They're ready in just 10 minutes but will be sure to impress your guests.

- 100g shop-bought sponge cake, cut in small cubes
- 1 ¾ cups frozen mixed berries
- 1 tablespoon castor sugar
- 4 scoops low-fat vanilla ice cream
Instructions
1 Divide sponge cake among 4 serving bowls.
2 Place berries, sugar and 2 tablespoons water in a medium-sized saucepan over a medium-high heat. Simmer for 3-4 minutes until berries are warmed through.
3 Spoon some berry juice over the sponge cake. Top with a scoop of ice cream then spoon over warm berries. Serve immediately.
