Bread and butter pudding

Try this low cost bread and butter pudding the next time you have left over fruit bread for a little extra fruity sweetness, not only delicious but it's the perfect for a winter dessert!

  • 12 slices fruit bread
    • 2 tablespoons reduced-fat spread
    • spray oil, to grease
    • 1 cup diced cooked apple
    • ½ teaspoon ground cinnamon
    • 3 eggs
    • 2 cups skim milk
    • 3 tablespoons soft brown sugar

    1 Apply a thin layer of spread to bread slices. Arrange half the slices spread-side up in a large, lightly greased dish.

    2 Cover bread with apple. Sprinkle with half the cinnamon. Cover with remaining bread, spread-side down.

    3 Beat eggs and milk together. Pour over bread. Press down lightly with your hands. Sprinkle with the remaining cinnamon and sugar.

    4 Leave to stand for at least 40 minutes before baking at 180°C for 30 minutes. Dust with icing sugar, if preferred.
