    For the pick 'em ups

1 Cut the onion in half and remove the skin from one half.

2 Place the onion, chicken, bread, mustard, salt, basil, parsley and egg in the processor and pulse until minced.

3 Heat the pan or grill. Use a spoon to scoop around a spoonful of mixture and drop into the pan or onto a grill plate or barbecue. Flatten to form small patties.

4 Cook until browned then turn and continue cooking until the patties are done, approximately 4 minutes each side.

5 Poke a skewer into the side of each patty and serve with dipping sauce.

    For the sauce

6 Mix all the ingredients in a small bowl and serve as a dip for kebabs and meatballs.

    HFG tip

This tasty quick dipping sauce is good with all kinds of grilled or barbecued foods, but spicy apricot flavours go particularly well with chicken.
