Curried sausages

  • 500g red Désirée potatoes, chopped
  • ¼ cup parmesan cheese, grated
  • spray oil
  • 400g lean chicken chipolata sausages
  • 1 onion, sliced
  • 2 cloves garlic, crushed
  • 1 teaspoon fennel seeds, crushed
  • 3 teaspoons curry powder
  • 3 teaspoons reduced-salt gravy powder
  • 2 large carrots, sliced
  • 1 large red capsicum, sliced
  • 150g green beans, trimmed, halved
  • 120g baby spinach leaves

    1 In a large pan, cook potatoes in enough boiling water to cover them for 14-20 minutes, until soft. Reserve 2-3 tablespoons cooking liquid. Drain and return to pan. Add parmesan and reserved water and mash until almost smooth. Season, keep warm. Meanwhile, spray a heat a large, deep non-stick pan with oil and set over medium-high heat. Cook sausages, turning often, 2-3 minutes each side or until golden. Remove from pan and set aside.

    2 Add onion and garlic to pan, sauté for 3-5 minutes or until lightly golden. Add fennel seeds, curry powder and gravy powder. Cook, stirring, 30 seconds. Gradually stir in 2 cups (500ml) water. Bring mixture to boil. Reduce heat to a simmer.

    3 Add carrot and capsicum. Cook covered for 5 minutes. Return sausages to pan, add beans and simmer 2-3 minutes until beans are bright green but still crisp. Stir in spinach until wilted. Season. Divide sausages among serving bowls, serve with mash.

    Adjust the heat levels in your curried sausages by adding more curry powder or a little chilli if you really want to spice things up.
