Feta and tomato toast topper
(at time of publication)
- 2 slices wholegrain toast
- 4 teaspoons hummus
- 1 large vine-ripened tomato, sliced
- 20g reduced-salt feta cheese, crumbled
- ¼ cup chopped fresh flat-leaf parsley
- cracked black pepper
1 Spread toast with hummus. Top with tomato, feta and parsley.
2 Season with cracked black pepper and serve.
Make it gluten free: Use gluten-free bread.
