  • 1 long red chilli, seeded, chopped
  • 1 garlic clove, crushed
  • 2 teaspoons red wine vinegar
  • 1½ tablespoons extra-virgin olive oil

    1 Place herbs, chilli and garlic in a food processor and process until combined. Add vinegar and oil and process again, adding one tablespoon hot water until dressing forms a pesto-like consistency.
