Kiwifruit, strawberry and watermelon overnight oats

  • ½ cup rolled oats
  • ½ cup reduced-fat milk (or plant-based alternative)
  • ½ cup reduced-fat Greek-style yoghurt
  • 1 kiwifruit, peeled and sliced
  • 6 strawberries, sliced
  • ½ cup chopped watermelon
  • 1 tablespoon roughly chopped unsalted pistachio kernels (optional)
  • 1 teaspoon honey, to garnish (optional)

    1 In a medium bowl, place oats, milk and yoghurt and stir well to combine. In a glass or jar, place half the oat mixture. Using ¼ cup of the strawberries, create a layer on the oats, then spoon in remaining oats. Chill, covered, overnight in fridge.

    2 To serve, top with remaining fruit. Sprinkle over pistachios and drizzle with a little honey, if using.
