Lemon meringue ice cream
(at time of publication)
- 1 litre low-fat vanilla ice cream or strawberry yoghurt ice cream (or a mix) (we used Tip Top)
- 3 tablespoons lemon curd
- 50g meringues, crushed
1 In a large bowl combine frozen yoghurt with lemon curd and meringues.
2 Either spoon into serving dishes and serve immediately or return to freezer and use straight from the freezer when needed.
- This looks pretty if strawberry and vanilla yoghurts are mixed together.
- If you return the mix to the freezer for 15 minutes, the meringues almost caramelise and become chewier.
