- 1 ¼ cup dates
- 1 cup ground almonds
- ¾ cup desiccated coconut
- ¼ cup rolled oatsoatmeal uncookedX
- 1 lemon, zest
- 4 tablespoons lemon juice
- ¼ cup reduced-fat cream cheese
- 2 tablespoons lemon juice
- hot water, enough to just blend
- zest of lemon, to decorate (optional)
1 Process dates then blend in other ingredients. Press into tin. Combine topping ingredients and spread on top. Decorate with lemon zest (if using).
2 Chill for 1 hour then serve.
