Maple and cinnamon granola

Crunchy clusters of maple-cinnamon perfection! This DIY granola is easy to make, full of healthy fats, and totally delicious.

  • 1 cup rolled oats
  • ½ cup desiccated coconut
  • ½ cup raw almonds, roughly chopped
  • ¹⁄³ cup macadamias, roughly chopped
  • ¹⁄³ cup pecans, roughly chopped
  • ¹⁄³ cup pumpkin seeds
  • ¹⁄³ cup sunflower seeds
  • 2 teaspoons cinnamon
  • 1 teaspoon vanilla essence
  • 4 tablespoon maple syrup
  • ¹⁄³ cup dried cranberries
  • ¹⁄³ cup dried coconut flakes

    1 Preheat the oven to 150°C. Line a baking tray with baking paper.

    2 In a large bowl, combine the oats, desicated coconut, nuts and seeds. Add the cinnamon, vanilla and maple syrup and stir well to combine.

    3 Lay the mixture on prepared tray, keep it quite compact (to help make clusters). Bake for 20 minutes until golden, stirring the mixture around and compacting again halfway through.

    4 Remove from the oven and top with cranberries and dried coconut flakes. Let sit for 10-15 minutes to cool before breaking the granola into clusters. Store in an airtight container for up to 1 month.
