- 500g lean sausage meat
- 1 onion, chopped
- 1-2 teaspoons mixed herbs
- 2 sheets ready-rolled frozen puff pastry (use reduced-fat if you can)
- beaten egg to glaze
1 Preheat oven to 210°C.
2 In a bowl or processor combine the sausage meat, onion and herbs. Place a sheet of pastry on a greased baking tray, brush the edges with water and spread the seasoned sausage meat over the pastry.
3 Roll over the second sheet of pastry with a rolling pin to enlarge it slightly (just enough to accommodate the filling), then lay it over the top, pressing down firmly around the edges. Trim to neaten the edges and using a serrated knife, cut 6-8 diagonal slices in the top of the pastry. Brush with beaten egg to glaze and bake for 20-25 minutes until golden brown and crisp.

Splashing a little cold water on the baking tray during cooking will create a steamy environment in the oven, which results in a lighter, crispier crust. Serve with plenty of vegetables.
