

Sesame chili stir-fry with pork tenderloin and noodles

Supermarket stir-fry kits are a quick and easy way to get a meal on the table when in a hurry. Add lean pork and extra veg for a healthier dinner choice.

Ingredients

- 300g pad Thai noodles
- 450g pork tenderloin, trimmed, cut into 3-5cm strips
- pinch of salt
- pepper
- 2 tablespoons peanut oil or canola oil
- 1 bag Sesame Chili Stir Fry Kit
- 2 capsicums, sliced into strips
- 4 spring onions, sliced
- 3 cloves garlic, minced

Instructions
- Cook noodles according to package instructions. Strain and run under cold water to stop the cooking. Set aside.
- Season pork with salt and pepper. Heat a wok or large pan over high heat (you’ll know it’s hot enough when a bead of water vaporises within 1-2 seconds of contact.) Add 1 tablespoon of the oil and swirl to coat. Add seasoned pork to wok and fry until just cooked. Transfer to a large plate.
- Swirl in remaining 1 tablespoon of oil then add capsicum and spring onion. Stir-fry for 2 minutes.
- Open the Sesame Chili Stir Fry Kit and set sauce package aside. Add vegetables to wok and cook until tender-crisp.
- Return pork to wok. Add sesame chili sauce and cooked noodles. Gently toss until coated and hot. Serve immediately.
