Tropical fruit salad overnight oats

  • ½ fresh mango, peeled and chopped
  • ½ cup reduced-fat Greek-style yoghurt
  • ½ cup rolled oats
  • 1 teaspoon maple syrup
  • ½ cup reduced-fat milk (or plant-based alternative)
  • 2 tablespoons light coconut milk
  • ¾ cup mixed tropical fruit, eg, chopped pineapple, watermelon and mango, passionfruit pulp, sliced grapes, banana, lychees or star fruit, to garnish
  • 1 tsp flaked or desiccated coconut, to garnish (optional)

    1 In a food processor, blitz mango and half of the yoghurt until smooth. Pour between two glasses.

    2 In a medium bowl, place oats, maple syrup and milk. Stir well to combine. If mixture seems thick, add a little more milk. Carefully spoon into the glass over mango yoghurt. Chill, covered, overnight in fridge.

    3 To serve, top with remaining yoghurt and prepared fruit
    and coconut, if using.
