Vanilla almond rice jars
Ingredients
- ¾ cup short or medium grain rice
- 3 cups So Good unsweetened almond milk
- ⅓ cup water
- ¼ cup castor sugar
- 1 teaspoon vanilla paste
- 1 cinnamon stick, broken in half
- Fruit topping
- 2 ½ cups frozen berries or cherries
- 2 tablespoons sugar
- sprinkling of nutmeg (optional)

Instructions
1 Place rice, milk, water, caster sugar, vanilla and cinnamon stick pieces in a pan. Heat gently until sugar has dissolved.
2 Bring to the boil. Reduce heat and simmer over a low heat for 30-35 minutes or until a thick pudding consistency forms. Remove cinnamon stick pieces. Spoon rice mixture into jars. Set to one side to cool.
3 Meanwhile, heat frozen fruit with sugar until softened.
4 Spoon fruit over rice. Cover and chill. Serve rice jars on the day you make them.
Variations
Make it gluten free: Check nutmeg is gluten free.
