Cinnamon-stuffed apples

    • 40g chopped walnuts
    • ⅓ cup mascarpone cheese
    • 1 tablespoon brown sugar
    • ½ teaspoon ground cinnamon

    1 Preheat oven to 180°C. Cut the top off each apple. Remove core, leaving the base intact.

    2 Combine walnuts, mascarpone, sugar, and cinnamon in a bowl. Stuff mixture into apples.

    3 Stand apples in an ovenproof dish and fill with 2cm boiling water. Bake for 30 minutes, or until tender. Serve warm.
