Baked sausages and balsamic tomatoes

This one dish sausage recipe is easy to throw together with only a few ingredients

Ingredients

  • 8 low-fat sausages
  • 6 cloves garlic, sliced
  • 2 red onions, cut into wedges
  • 1 tablespoon olive oil
  • 600g cherry tomatoes, halved
  • 3 tablespoons balsamic vinegar
  • Handful of fresh basil leaves, torn, to serve

    1 Preheat the oven to 180ºC/fan 160ºC/gas 4. Put the sausages, garlic and red onions in a large roasting tin, then drizzle over the olive oil and toss to coat. Bake for 15 min or until golden brown.

    2 Remove the roasting tin from the oven, then add the cherry tomatoes and drizzle over the balsamic vinegar. Season with ground black pepper, then gently toss everything together to combine. Return the tin to the oven for a further 15 min or until the sausages are cooked through, then stir through the basil and serve.
