  • 50g dried red chillies
    • 3 cloves garlic, crushed
    • pinch salt
    • ½ teaspoon ground coriander
    • ½ teaspoon ground cumin
    • ¼ teaspoon caraway seeds (optional)
    • 3 tablespoons tomato paste
    • 4 tablespoons olive oil

    1 Tear chillies into pieces. Soak in hot water for about 1 hour 15 minutes or until soft. Drain and place in a food processor. Process.

    2 Add garlic, salt, spices and tomato paste to processor. Process to a paste.

    3 Add oil. Taste and adjust seasonings. Refrigerate until use.
