Fruity rocky road

The kids will love to make our low cost, homemade fruity rocky road, so easy and quick to make, great as a lunchbox treat or makes a fabulous thank-you gift to take to your dinner hosts or to make for friends and family at Christmas.

  • 75g reduced-fat spread
    • 1 ½ cups dark chocolate buttons
    • 15 milk arrowroot biscuits, crushed
    • 1 cup mini marshmallows
    • ½ cup dried apricots, chopped
    • ½ cup sultanas

    1 Line a 17cm x 27cm slice tin with non-stick baking paper. Microwave spread and chocolate in a microwave- proof bowl, using 50% power setting for 2 minutes and mix well until smooth.

    2 In a large bowl combine all dry ingredients and pour chocolate mixture on top. Mix well and press into slice tin.

    3 Refrigerate for 1 hour or until slice is completely set. Cut in 28 slices. Store in an airtight container for up to 3 days.
