Honey-soy glazed pork with broccolini noodles
Ingredients
- Glaze
- 3 tablespoons mirin
- 1 tablespoon salt-reduced soy sauce
- 2 teaspoons rice wine vinegar
- ½ teaspoon sesame oil
- 1 ½ teaspoons finely grated fresh ginger
- 200g dried egg noodles
- 3 bunches broccolini, trimmed, cut in thirds
- 1 tablespoon rice bran oil
- 4 x 120g pork loins or pork fillets, thinly sliced
- 1 tablespoon cornflourcornstarchX
- 1 tablespoon salt-reduced soy sauce
- 1 tablespoon liquid honey
- 2 Lebanese cucumbers, cut in matchsticks
- ¼ cup roasted peanuts, roughly chopped, to serve

Instructions
1 To make dressing, combine all ingredients in a small bowl and stir. Set aside.
2 Cook noodles in a large saucepan of boiling water following packet directions, adding broccolini for the last minute of cooking. Drain well.
3 Heat oil in a large non-stick frying pan set over a high heat. Dust pork evenly with cornflour. Add pork to pan and cook for 1-2 minutes or until lightly browned. Add soy sauce and honey to pan. Cook, stirring, for 1 more minute or until pork is coated in honey mixture. Remove pork from pan, cover to keep warm and set aside.
4 Combine cooked noodles and broccolini with cucumbers in a large bowl. Add dressing to noodle bowl and mix lightly.
5 Divide noodle mixture among 4 plates. Top with reserved pork, scatter with peanuts and serve.
Variations
Make it low FODMAP: Use 1 tablespoon brown sugar instead of honey and use rice noodles.
