Pumpkin, chickpea and tomato tagine

This Moroccan-inspired tagine brings together tender pumpkin, chickpeas, tomatoes and green beans with fragrant spices and sweet dates. Serve with couscous and all the fresh, crunchy toppings for a satisfying meal.

Ingredients

  • 1 tablespoon olive oil
  • 1 medium onion, thinly sliced
  • 1 teaspoon grated fresh ginger
  • 1 teaspoon cumin
  • 1 teaspoon smoked paprika
  • 700g butternut squash, peeled, cut into large cubes
  • 400g can no-added-salt chopped tomatoes
  • 400g can no-added-salt chickpeas, rinsed, drained
  • 1½ cups green beans, sliced diagonally (frozen and thawed, or fresh)
  • ¼ cup pitted dates, sliced lengthways
  • ²⁄³ cup instant couscous
  • ½ cup reduced-fat Greek-style yoghurt
  • 2 tablespoons chopped fresh coriander leaves
  • 2 tablespoons chopped raw almonds
  • 1 lemon, zest

    1 Heat oil in a saucepan over medium heat. Gently fry onion for 5 minutes until softened. Add ginger, cumin and paprika. Cook, stirring, for 30 seconds until fragrant.

    2 Add squash, tomatoes and chickpeas with 1 cup water. Cover and bring to the boil. Simmer for 15-20 minutes, until squash is just tender. Add beans and dates. Simmer uncovered for 5 minutes.

    3 In a medium bowl, place couscous with ²⁄³ cup boiling water. Cover and leave for 5 minutes. Fluff with fork.

    4 Divide couscous among four plates and top with tagine. Serve with a dollop of yoghurt and sprinkle coriander, almonds and lemon zest over top.
