Beef noodles with creamy peanut sauce

A quick and easy dinner that's filling and flavourful!

  • 2 tablespoons light olive oil
  • 1 red onion, sliced
  • 1 red capsicum, sliced
  • 1 green capsicum, sliced
  • 3 cloves garlic, sliced
  • 500g extra lean beef strips
  • 300g vermicelli rice noodles
  • roasted peanuts, chopped, to serve
  • spring onion, chopped, to serve

    • Creamy peanut sauce 
    • 1 tablespoon maple syrup
    • 2 tablespoons reduced-salt gluten-free soy sauce
    • ¹⁄³ cup no-added-salt-or-sugar peanut butter

    1 In a large frypan, heat the oil over medium-high heat. Cook onion and capsicum for 5 minutes, or until slightly golden. Add the garlic and cook for a further 2 minutes.

    2 Add the beef strips to the pan and cook for a further 3 minutes, until the meat is browned.

    3 Cover the noodles with hot water and sit for 10 minutes, or until cooked. Drain well.

    4 Whisk peanut sauce ingredients with ¹⁄³ cup water in a bowl until smooth.Pour over beef mixture along with the cooked noodles. Stir well and serve with peanuts and spring onion.

    Change up your noodle toppings with lime juice and coriander or Thai basil, or get spicy with sliced fresh chilli or flakes.

      Recipe had serious potential, but wondering if the weight given for the noddles is the dry weight or the cooked weight? We made 2 packets of 125g noodles and it was waaaaaay to much.

      Hi Tammy. Thanks for your comment. You’re very welcome to reduce the amount of noodles. It is the dry weight. We like to make sure there is plenty of volume to meals, so people feel satisfied. This dish is also really great reheated the next day for lunch.
