Caramelised oranges with ginger and walnuts

    • ¼ cup sugar
    • 50ml cold water
    • 100ml hot water
    • 2 tablespoons finely chopped crystalline ginger
    • ¼ cup chopped walnuts

    1 Remove the peel and pith from the oranges, reserving some of the skin. Using a very sharp knife, cut each orange into thin slices. Cut the pith off the reserved peel and cut into very fine hair-like strips and set aside.

    2 Bring the sugar and water to the boil in a non-stick pan and cook until it turns a deep amber colour. Remove from the heat, put the pan in the sink and carefully add the hot water. This will create lots of steam so cover your hand with an oven glove or a towel while doing this. Stir until the caramel has dissolved, cool a little, then add the ginger and pour over the sliced oranges. Add the shredded peel and cool before serving. Serve topped with chopped walnuts.

    Serving suggestion

    Delicious with a dollop of yoghurt or ice cream (use non-dairy varieties if lactose is an issue for you)
