  • ¼ cup reduced-fat mayonnaise
  • 2 cups shredded cooked chicken breast
  • 2 spring onions, finely chopped
  • 1 tablespoon chopped fresh dill
  • 8 green oak lettuce leaves, torn
  • 4 gluten-free multigrain bagels, halved
  • 1 small avocado, thinly sliced
  • ¼ cup finely chopped pistachio kernels

    1 Whisk together yoghurt and mayonnaise in a large bowl. Add chicken, onion and dill, stirring to combine. Season with freshly ground black pepper.

    2 Place lettuce on bagel bases. Top with avocado and chicken mixture. Sprinkle over nuts, then serve sandwiched with bagel tops.
