Chicken pasta

  • 1 portion Basic spiced chicken mix (see tip)
  • 1 portion Basic bean mix (see tip)
  • 200g penne pasta
  • 1 ½ cups cherry tomatoes, halved
  • 120g pack baby spinach
  • ½ cup fresh parsley or fresh basil
  • freshly ground black pepper
  • 4 tablespoons fresh parmesan cheese shavings

    1 Remove Spiced chicken mix and Basic bean mix from freezer the night before. Cook pasta until al dente. Drain, keeping a little water with it to prevent sticking. Add chicken and bean mix. Cook over a gentle heat for 5 minutes.

    2 Add tomatoes and spinach to pan. Toss and cook for 5 more minutes. Add parsley. Season with pepper. Serve topped with parmesan shavings.
