Chocolate muesli bars

Made with dried dates and raw cacao powder, these chocolatey muesli bars are as tasty as they are healthy.

  • 1 cup oats
  • ⅔ cup pitted dried dates, finely chopped
  • 3 tablespoons runny honey
  • 3 tablespoons raw cacao powder
  • ½ cup plus 1½ tablespoons unsweetened almond butter
  • ½ cup almonds, chopped

    1 Heat the oven to 180°C/fan 160°C/gas 4. Line a shallow 16x25cm baking tray and a baking sheet with baking paper.

    2 Put the oats on the prepared baking sheet and cook in the oven for 10–15 min until toasted.

    3 Meanwhile, toss the dates with the remaining ingredients in a medium bowl. Add the baked oats to the bowl and mix everything together with your hands.

    4 Transfer the mixture into the prepared baking tray and press the mixture flat so it’s tightly packed. Put in the freezer for 15 min to settle and harden, before cutting into 12 bars. Transfer to an airtight container and keep in the fridge for up to a week.

      We had to modify this recipe a bit because we didn’t quite have enough almond butter so with mixed some peanut butter into the recipe. They turned out tasting a bit like snickers bars (which was actually pretty great). Only small issue is that they are a little crumbly. But kids enjoyed!
