- 400g falafel mix
- 2 cups frozen mixed vegetables, defrosted
- olive spray oil
- 4 tomatoes, roughly chopped
- 1 teaspoon harissa paste
- 2 tablespoons chopped fresh coriandercilantroX
- 4 cups salad greens
- 4 wholegrain pita breads
1 In a large bowl combine falafel mix and vegetables. Mix well and shape into 4 patties.
2 Heat a non-stick frying pan with oil spray and fry patties until cooked through.
3 To make salsa, in a small bowl combine tomatoes, harissa and coriander. Mix well.
4 Load each pita bread with salad greens, 1 falafel patty and top with tomato salsa.
Make it gluten free: Use gluten-free falafel mix and pita bread.
