Fruit and nut muesli slice

You can’t beat a good homemade fruit and nut muesli slice and our dairy-free recipe is wickedly divine. These ones are soft, chewy, delicious and really simple to make, great to pack for picnics or a lunchbox treat.

  • ¼ cup liquid honey
    • 100g reduced-fat spread
    • ¼ cup no-sugar-added, no-salt- added smooth peanut butter
    • ½ cup apple purée
    • ¾ cup rolled oats
    • 1 cup Rice Bubbles
    • 5 Weet-Bix, crushed
    • ½ cup sultanas
    • ¼ cup sesame seeds
    • ¼ cup sliced almonds

    1 Line a a 17cm x 27cm slice tin with non-stick baking paper. Microwave honey, spread and peanut butter in a microwave-proof bowl on 50% power setting for 2 minutes. Once melted stir in apple purée and mix well until smooth.

    2 In a large bowl combine all the dry ingredients and pour peanut mixture on top. Mix well and press into slice tin.

    3 Refrigerate for 1 hour or until slice is completely set. Cut into 20 slices. Store in an airtight container for 3-5 days.
