

Anzac slice
Ingredients
- 1 cup rolled oatsoatmeal uncookedX
- 2 tablespoons chia seeds
- ¾ cup wholemeal flour
- ¹⁄³ cup tapioca flour
- 1 cup shredded coconut
- ¹⁄³ cup brown sugarlight brown cane sugarX
- 3 tablespoons golden syrupmaple syrup corn syrupX
- 150ml rice bran oil
- ¾ teaspoon baking soda

Instructions
1 Preheat oven to 180°C and grease and line the base of 20 x 30 x 3cm baking pan with baking paper.
2 In a large bowl, combine oats, chia seeds, flours, coconut and sugar.
3 In a saucepan, place golden syrup and oil and set over medium heat. Once hot, remove from the heat and stir in baking soda. Pour the oil mixture into the bowl with the dry mixture and mix until well combined. Transfer mixture to prepared baking pan and, with the back of a spoon, smooth over surface.
4 Bake in oven for 25-30 minutes until golden. Set aside to cool completely before slicing.
