Grilled tomatoes with feta and rocket

- 3 medium vine-ripened tomatoes, quartered
- cooking spray oil
- 30g baby rocketarugulaX
- ⅓ cup balsamic vinegar
- 80g feta, crumbled
1 Preheat a chargrill or barbecue grill on a high heat. Spray tomatoes with cooking oil. Grill for 1 minute each side or until brown.
2 Place rocket onto a large serving plate. Top with tomatoes and drizzle with vinegar. Top with feta and serve.
