
Lentil, vege and tuna salad
A simple lentil salad with fresh vegetables and tuna that's perfect as a healthy lunch for two people.

Ingredients

- 1 orange capsicum
- ¾ cup green beans
- ¾ cup broccoli (or other vegetables of your choice)
- 185g can tuna in spring water
- 400g can brown lentils
- 130g pack baby spinach
- 1 bunch fresh basil
- 1 tablespoon olive oil
- 1 tablespoon lemon juice
- sprinkle chilli flakes
Instructions
1 Steam or microwave veges until tender but still crisp. Run under cold water to cool. Drain.
2 Drain tuna and break up. Drain lentils. Combine all veges, tuna, lentils and basil in a bowl and mix well.
3 To make dressing, combine oil, lemon juice and chilli flakes. Pour over salad and mix well. Serve.
