  • 1¼ cups self-raising flour
    • 1½ cups unprocessed bran
    • ¼ teaspoon salt
    • ½ teaspoon cinnamon
    • ½ cup sugar
    • 1 cup mixed berries, frozen or fresh
    • 2 small bananas, mashed
    • ¾ cup reduced-fat milk
    • ¼ teaspoon baking soda
    • 1 egg
    • 1 teaspoon vanilla essence
    • 2 tablespoons reduced-fat spread, melted
    • Extra fresh berries and dusting of icing sugar (optional)

    1 Preheat oven to 190°C. Lightly oil a 12-hole muffin tin, or line with paper cases.

    2 Into a large mixing bowl, sift flour and add bran, salt, cinnamon, sugar, berries and mashed banana.

    3 In a separate bowl or large jug, combine the milk, baking soda, egg, vanilla and melted spread. Add to the other ingredients. Mix until just combined.

    4 Spoon batter into muffin tins. Bake for 18-20 minutes or until a skewer inserted comes out clean.

    5 When cool, dust with a little icing sugar and serve with extra fresh berries if desired.
