Oaty apricot slice

  • 2 cups rolled oats
  • 1 cup self-raising flour
  • ⅓ cup brown sugar
  • ⅓ cup honey
  • 6 tablespoons reduced-fat spread
  • 1 egg white
  • handful raisins or sultanas
  • handful dried apricots, chopped

    1 In the microwave melt the spread and honey. In a large mixing bowl combine rolled oats, flour, sugar and dried fruit. Add the spread and egg white to dry ingredients. Combine well. Press mixture into a sprayed Pyrex dish (not too large) and spread the mixture evenly.

    2 Bake 20-25 minutes on 180°C until golden brown. Only when the mixture is cold should the slice be cut, otherwise it will break.

    Carolyn says: "This delicious slice always turns out great. I have tried the slice without the apricots and added more raisins or sultanas. I just use what I have in the cupboard. At least with making it yourself you know what the ingredients are."
