

Pineapple and lime cooler

- 500ml soda waterclub soda seltzer waterX
- 250ml pineapple juice
- 6 limes
- ice, to serve

Instructions
1 Cut 4 of the limes in half, or quarters if they’re large. Put the limes in the bottom of a large jug. Using the end of a rolling pin, bash the limes around a bit to release their juices and fragrant oils (bartenders do this when they’re making mojitos and other limey cocktails).
2 Pour over the soda water and pineapple juice, stir to combine and add the rest of the limes, sliced into rings. Add lots of ice to serve.
