Roast potatoes with bay leaves

No roast is complete without a side of roast potatoes and there is no need to skip this indulgence. Instead try these healthier twist on an old favourite.

  • 1.8kg agria potatoes, peeled and cut into 4cm chunks
  • 4 bay leaves
  • 3 tablespoons olive oil

    1 Preheat the oven to 190°C/fan 170°C/gas 5. Put the potatoes into a large pan of cold water with the bay leaves and bring to the boil. Reduce the heat and simmer for 8 min. Drain well, then return to the pan and add the oil. Shake the pan to roughen up the edges, then season with black pepper.

    2 Transfer to a very large baking sheet and roast for 1 hr or until crisp and golden. Discard the bay leaves to serve.
