- 4 carrots, peeled
- 2cm piece fresh ginger, peeled
- ½ green cabbage or savoy cabbage
- 2 red capsicums, thinly sliced
- 1 lime, juice
- 1 fresh chilli, sliced (optional)
1 Grate carrots and ginger and place in a large bowl. Remove heart from cabbage and slice thinly. Add to bowl with capsicums.
2 Add lime juice and chilli (if using). Gently mix before serving.
