  • 125g SunRice Quick Cup microwaveable brown rice
    • 50g sliced rare roasted beef, chopped
    • 1 small Roma tomato, diced
    • ¼ firm ripe avocado, diced
    • 1 cup baby rocket
    • 1 tablespoon balsamic vinegar

    1 Microwave brown rice following packet directions.

    2 Place rice, roasted beef, tomato, avocado and rocket in a bowl. Season with freshly ground black pepper and add balsamic to taste. Gently toss to combine before serving.
