Sesame and ginger soba noodle salad

Ditch the boring desk salad and try this instead! We’ve paired earthy soba noodles with a zesty ginger and chilli dressing for a total flavour explosion.

  • 200g soba noodles
  • 1 thumb-sized piece fresh
  • ginger, peeled, grated
  • 2 teaspoons toasted sesame oil
  • 1 tablespoon reduced-salt soy sauce
  • 1 lime, juice and zest
  • 1 teaspoon honey
  • 1 small red chilli, sliced
  • ½ cucumber, cut into matchsticks
  • 2 large carrots, julienned or grated
  • 2 cups edamame, podded, steamed
  • 2 spring onions, sliced
  • 2 red capsicums, deseeded and sliced
  • ¾ cup unsalted roasted cashews, to serve

    1 In a large pot of boiling water cook soba noodles according to packet instructions. Drain into a colander and rinse under cold water to stop cooking.

    2 In a small bowl combine ginger, sesame oil, soy sauce, lime juice, zest, honey and chilli.

    3 In a large salad bowl combine noodles and vegetables, reserving a handful of spring onion for garnish. Pour over dressing and toss to combine. Divide among 4 bowls and garnish with cashews and remaining spring onions.
