Spiced cottage cheese and date muffins

These muffins are soft, fluffy and full of warm cinnamon goodness. Perfect for brekkie or an afternoon snack!

  • 1 cup cottage cheese
  • 2 eggs
  • 2 tablespoons honey
  • 1 tablespoon lemon juice
  • ¼ cup soy milk
  • 1 teaspoon cinnamon
  • ½ teaspoon ground nutmeg
  • 1½ teaspoons baking powder
  • 1½ cups plain flour
  • 3 pitted dates, chopped
  • ¹⁄³ cup flaked almonds

    1 Line a 12-hole muffin tin with paper cases. Preheat oven to 160°C fan-forced.

    2 In a blender or food processor, blend cottage cheese, eggs, honey, lemon juice and milk until smooth. Pour into a large bowl.

    3 Add cinnamon, ground nutmeg, baking powder, flour and dates and stir to combine.

    4 Spoon 2 tablespoons into each hole and top with almonds. Bake for 25 minutes, until lightly golden.

     

    HFG tip

    Replace almonds with walnuts or pistachios. Serve with extra cottage cheese and a sprinkle of extra cinnamon, if desired.
