Peach sorbet

  • ¾ cup fruit juice
  • 800g chopped flesh of just-ripe peaches
  • 2 tablespoons lemon juice
  • 1 teaspoon vanilla paste
  • 2 teaspoons lemon or lime zest

    1 Place fruit juice in a pan and bring to the boil. Simmer for 2 minutes. Add peaches and remaining ingredients and cook over a medium heat for 6-7 minutes, stirring occasionally. Leave to cool.

    2 Purée mixture until smooth. Place in an ice cream maker and process for about 20 minutes and then pour into a freezer-proof container, or pour the purée immediately into a freezer-proof container and freeze.

    3 Remove from the freezer 15 minutes before serving to allow sorbet to soften.

    Variations

    The sorbet will be yummy whichever way you prepare it but for a creamier texture, use an ice cream maker. Without one, the sorbet will be more like a granita.
