Prawns with sesame cucumber chilli salad
Ingredients
- 500g large raw prawns, peeled and tails removed
- ¼ cup sesame seeds, toasted
- 2 tablespoons sesame oil
- ¼ cup ponzu sauce
- ½ bunch fresh Thai basil leaves
- ½ bunch fresh coriandercilantroX leaves, chopped
- 1 large cucumber, sliced into halves
- 1 red chili, sliced
- 1 green chili, sliced
- 2 bunches broccolini, steamed, to serve

Instructions
1 In a large frying pan over high heat, cook prawns for 2-3 minutes on each side until lightly golden and charred.
2 In a small bowl, whisk together sesame seeds, sesame oil and ponzu sauce.
3 In a large bowl, combine the cooked prawns, herbs, cucumber, red and green chili.
4 Drizzle the dressing over the salad and toss gently to coat everything evenly.
5 Transfer to a serving dish and serve immediately with broccolini on the side.
