Prawns with sesame cucumber chilli salad

Sesame prawns tossed with cucumber, herbs and chilli make for a fresh, fast and seriously satisfying dinner.

  • 500g large raw prawns, peeled and tails removed
  • ¼ cup sesame seeds, toasted
  • 2 tablespoons sesame oil
  • ¼ cup ponzu sauce
  • ½ bunch fresh Thai basil leaves
  • ½ bunch fresh coriander leaves, chopped
  • 1 large cucumber, sliced into halves
  • 1 red chili, sliced
  • 1 green chili, sliced
  • 2 bunches broccolini, steamed, to serve

    1 In a large frying pan over high heat, cook prawns for 2-3 minutes on each side until lightly golden and charred.

    2 In a small bowl, whisk together sesame seeds, sesame oil and ponzu sauce.

    3 In a large bowl, combine the cooked prawns, herbs, cucumber, red and green chili.

    4 Drizzle the dressing over the salad and toss gently to coat everything evenly.

    5 Transfer to a serving dish and serve immediately with broccolini on the side.
