  • 1 tablespoon olive oil
  • 1 small leek, finely chopped
  • 2 stalks celery, finely chopped
  • 1 carrot, finely chopped
  • 1 tablespoon chopped fresh rosemary
  • salt and pepper, to season
  • 400g chicken or pork mince
  • 1 cup chicken or vegetable stock

    1 Heat oil in a large saucepan. Add leek, celery, carrot and rosemary. Season. Cook, stirring, for 10 minutes until softened.

    2 Add mince and break it up with a wooden spoon or spatula. Cook, stirring, for 10 minutes until almost cooked.

    3 Add stock. Cover and bring to the boil over a high heat. Remove lid. Simmer for 10-15 minutes until liquid has evaporated and everything is cooked.

    4 Cool and chill for up to 24 hours, or use immediately in one of the recipes below:
