

Apricot and goji berry bars
Ingredients
- 100g reduced-fat spread
- ½ cup liquid honey
- 2 eggs, lightly beaten
- 2 cups rolled oatsoatmeal uncookedX
- ½ cup self-raising flour
- 2 teaspoons mixed spice
- 1 cup diced dried apricots
- 1 cup dried cranberries
- ⅔ cup goji berries (see tip)
- ⅔ cup sunflower seeds

Instructions
1 Preheat oven to 160°C. Line a 20cm x 30cm slice tin with a sheet of baking paper, leaving a 2cm overhang at long sides.
2 Melt spread and honey in a small saucepan set over a low heat then leave to cool completely. Whisk eggs into honey mixture.
3 Place remaining ingredients in a large bowl. Add honey mixture to bowl and stir to combine. Press mixture into prepared tin and smooth surface with a spatula.
4 Bake for 25 minutes or until golden. Leave to cool completely in tin then cut in bars.
HFG tip
Goji berries are available in the health-food aisle of your local supermarket and at most health-food stores. Or instead of goji berries, use raisins or dried cranberries.
