- 1 cauliflower
- 1 onion, chopped
- 4 cups water (or chicken stock)
- blue cheese or parmesan cheese
1 Chop a cauliflower into even-sized pieces.
2 Fry an onion in a little oil in a large pot, add the cauliflower and chicken stock or water and simmer, covered, until tender.
3 Whiz with a stick blender until smooth.
4 Top with a little crumbled blue cheese or parmesan.
Try cauliflower roasted with a little olive oil in the oven, or steamed and mashed like potato with parmesan, olive oil and salt & pepper.
