Chargrilled beef salad
- 700g baby potatoes, halved
- fresh mint (optional)
- 2 (450g) sirloin steaks, fat-trimmed
- 1 tablespoon olive oil
- 1 teaspoon Tuscan seasoning
- 3 cups rocketarugulaX
- 4 cups salad vegetables, diced, such as spring onions, tomatoes, cucumber, capsicums
- 40g parmesan cheese shavings
- lemon wedges
1 Cook potatoes in lightly salted boiling water until tender, adding fresh mint if you have any to hand. Drain and leave to cool.
2 Meanwhile, heat a grill or barbecue. Brush steaks with a little oil and season with Tuscan seasoning. Cook for 7-8 minutes, turning once until cooked to your liking. Leave to rest for 5 minutes.
3 Arrange rocket on a serving plate. Thinly slice steaks. Add potatoes and vegetables to rocket. Top with sliced beef. Sprinkle over parmesan and serve with lemon wedges.
