Cottage cheese and roasted red pepper dip

  • 330g jar roasted peppers, drained
  • ½ teaspoon chilli flakes (optional)
  • ¼ cup walnuts, roasted and chopped
  • ¼ cup fresh mint leaves

    1 Place the cottage cheese, red peppers and chilli flakes (if using) into a food processor and
    blend until smooth.

    2 Scoop the dip onto a serving plate and top with walnuts and mint leaves.

    To serve: Try sliced crunchy vegetables like carrots, radishes, capsicum and cucumber, or toast
    high-protein wraps in a pan with a spray of oil over high heat and slice into triangles
