Creamy chicken and avocado open sandwich
- 2 slices grainy bread, toasted
- ⅓ ripe avocado
- 1 cup rocketarugulaX leaves
- 1 cup chopped cooked chicken
- 1 tablespoon light mayonnaise
- 1 tablespoon low-fat plain yoghurt
- pinch of salt and pepper, to taste
- tabasco sauce (optional)
1 Spread avocado on toast. Add rocket leaves.
2 Combine chicken with mayonnaise and yoghurt and mix well. Add this on top of rocket. Season with salt, pepper and tabasco (if using).
Make it gluten free: Use gluten-free bread and check mayonnaise is gluten free.
