Easy salmon and kale toast

This smoked salmon with eggs, paired with curly kale and a kick of chilli, is a protein-rich meal for one that is both satisfying and just a little bit fancy!

  • 1 slice wholegrain bread
  • spray oil
  • 2 cups chopped kale or silver beet
  • 1 egg
  • 2-3 slices (40g) smoked salmon
  • sriracha or other chilli sauce, to taste (optional)

    1 Toast bread. Spray a pan with oil and set over medium-high heat. Add kale and gently cook for 5 minutes, or until tender. Remove from pan and place on top of toast.

    2 Add egg to pan (spray again with oil if needed). Fry egg until done to your liking.

    3 Arrange salmon on top of kale and top with egg. Season to taste and garnish with chilli sauce (if using).
