- 1 cup low-fat cottage cheese
- 100g feta cheese, crumbled
- 1 red capsicum
- black pepper
1 Preheat oven to 200ºC. Place capsicum in oven and roast until soft, about 20 minutes. Remove from oven, cool, then remove skin and seeds (or use ready-made roast capsicum).
2 Combine cottage cheese, feta and capsicum in a blender or food processor and blend until smooth. Season with pepper.
