Spicy avocado, salmon and baby spinach on toast

  • ½ small ripe avocado
  • 1 tablespoon chopped chives
  • 2 teaspoons lemon juice
  • few drops Tabasco sauce
  • 2 slices wholegrain toast
  • 50g smoked salmon
  • ½ cup baby spinach leaves

    1 Mash the avocado with chives. Mix in lemon juice and Tabasco. Spread onto toast.

    2 Top with salmon and serve with baby spinach.

      How’s best to store the remaining avocado to stop it going brown?

        Thanks for your question. You can seal the other half off with some plastic wrap or one of those avocado ‘food huggers’ and store it in the fridge.
